YELLOW MELON PROSCIUTTO SALAD

Ingredients per 4 portions
4 x 100 g yellow melon cuts ( 4x 41 kcal, together 164 kcal)
100 g of prosciutto crudo (235 kcal, can vary )
100 g Fetta cheese (optional) (app. 285kcal, can vary)
arugula leaves (optional)
salt and ground pepper
Dressing
2 TS olive oil ( 2x 10 ml) ( 164 kcal )
citron sauce
1 ts sugar (5 g) ( 20 kcal)
Preparation
1. We clean and cut yellow melon (400 g) to cubes or slices.
2. We cut prosciutto (100 g) to stripes.
3. We cut Fetta cheese (100 g) to cubes. (optional)
4. We mix melone cubes, fetta cubes and stripes of prosciutto. We salt and pepper salad.
5. We prepare dressing from olive oil ( 2 TS) , citrone sauce and sugar(1ts) and pour it over salad.

This tasteful salad is really suitable as light dinner served alone or together with 1 wholegrain bun.
There are a lot of vitamins.
You can set your needed calory income as needed by decreasing number of whole grain buns and decreasing amount of eaten salad and mostly amount of fetta cheese in portion.
You can prepare version of salad with or without Fetta cheese, it is up to you.
If you do not have Fetta cheese, you can use similar kind of cheese.
For calory calculation calculate separately salad, divide it by number of portions, and add calories of 1-2 wholegrain bun, kaiser, half of whoegrain baguette ...
