Chicken Noodles Soup Recipe
Ingredients per 8-10 servings
650 g of chicken ( back, neck, wing) or turkey wings and neck
3500 ml of water
6 pcs of carrots ( peeled 460 g)
1 pcs bigger kohlrabi ( peeled 149 g)
1 parsley root (peeled 86 g)
100 g of celery root
1 middle onion (91 g)
2-3 cloves of garlic
5-6 teaspoons of seasoning for soup Dobrotka / Podravka or other seasoning (32 g) contains solt, sugar, dried vegetable
15 pcs of whole black pepper (rolls)
salt, ground pepper for final seasoning
125 g of noodles before cooking / after cooking it become 400 g, which corresponds to 5 portion by 80 g.
Preparation and tips
- Properly wash chicken parts or turkey parts and put them in 3,5 liters of cold water. Heat it up. After 15 minutes, the foam is starting creating. Take the foam out of the soup. It would take about 1/2 hour when soup is heating up and foam is creating in parallel. Do not leave foam in the soup please. It is horrible mistake.
- After stopping creation of foam, and once you already clean it by taking it out, add 15 pcs of whole black pepper rolls.
- Add food seasoning 5-6 teaspoons (32 g) Dobrotka / Podravka to the soup.
- Add 2-3 cloves of garlic. I usually cut the end to release taste better.
- Add 1 pealed and quartered onion.
- Slowly cook for 1 hour (low heat).
- Then add washed, peeled and cut for small cubes/pieces carrots, parsley root, celery root, kohlrabi.
- Slowly cook for additional 2-3 hours, all vegetable become soft and soup has already beautiful taste.
- At the end taste the soup and adjust taste with salt and ground pepper.
- If you wish to have soup a little sharper, you can add a little of chilli or slice of green pepper. But not all people like it.
TIP1: In the evening do not forget to take out all vegetable and meat from the soup with the sieve. I personnally put "dried" vegetable in separate plastic box with lid and cooked chicken meat in separate plastic box. This trick ensure that next day soup will not become macerate...of vegetable, meat and everything...but if you have big family, there is no discussion, soup will be eaten.
